Meet the Osteria Weddings Team

Mark started the PLB Group journey working at Sandbar & Grill in 2005, the venue that would later relaunch as Osteria Casuarina, PLB Group’s first venture, in 2010. With over 30 years across some of Australia’s most exclusive and diverse hospitality venues, he now oversees the entire PLB Group portfolio, bringing a depth of experience and genuine love for the industry that shapes everything the group does. Mark has been part of thousands of weddings across his career, and his approach to each one is grounded in a philosophy he keeps refreshingly simple: your guests will spend most of their time eating and drinking, so make sure both are exceptional.

If you want a measure of what Mark brings to a wedding, consider this: he has navigated floods and a global pandemic, keeping nearly 300 couples on track through COVID while conditions were anything but predictable. He has also been found shovelling mud alongside a groom to get a flood-damaged venue ready with less than 24 hours to spare. That kind of dedication is just part of the job, as far as Mark is concerned.

Emily has been with the PLB Group since mid 2019, and in that time she’s done one thing consistently well: helping couples find the right venue for their dream day. Her role spans wedding sales and couple experience at Osteria Weddings, guiding couples from first enquiry through to booking, building tailored proposals and making sure the process feels supportive rather than overwhelming. With over 500 weddings across sales, planning and coordination, her experience is a real asset for all our couples.

The weddings she loves most are the ones that feel genuinely personal, relaxed and atmospheric. Her favourite moment of any wedding day is when the room settles, the nerves kick in, and then suddenly everyone is laughing and crying at the same time.

Emily’s pick of the Osteria menu – the slow roasted lamb shoulder, ideally alongside a really good margarita. She’s also heavily invested in good wine, good food and the refined skill of insisting she’ll leave early and absolutely never doing so.

Isabel, joined the PLB Group family in June 2011, and is an integral part of the team, wearing two hats as both a Wedding Planner at all our venues and Marketing Manager for the group’s two restaurants. She brings creativity and dedication to everything she does, from crafting unforgettable wedding experiences to telling the story of the restaurants she loves. Since moving into the weddings department in 2014, she has been involved in over 1,000 weddings across sales, planning and on-the-day coordination, making her one of the team’s most experienced and trusted hands.

At heart, she believes a great wedding is one where everyone is gathered together for a joyful celebration of love, and her favourite moment of any wedding day is always the ceremony. To her, it’s the whole reason everyone is there, and no matter how many she has witnessed, the magic never fades. Whether she’s planning the finest details of your big day or ensuring every guest feels the warmth of a PLB venue, her passion for people and unforgettable moments shines through in everything she does.

Tahlia joined the PLB Group in 2021 in a front-of-house role, where she gained invaluable hands-on experience being part of wedding days as they unfolded. Seeing firsthand how each moment comes together and what makes a day flow seamlessly gave her a deep appreciation for the craft of wedding planning. A natural progression into the planning team followed, where she now focuses primarily on weddings at Osteria and Ancora, keeping everything running smoothly behind the scenes with a love of organisation that she proudly owns – Type A and thriving. In her time working across weddings, she has been part of over 500 celebrations.

Tahlia’s favourite weddings are the ones where couples dare to think outside the box, because everyone wants their day to be remembered, and she loves seeing creativity come to life in unexpected ways. With a genuine love of love and a passion for the details that make a wedding uniquely yours, Tahlia brings warmth, dedication, and a whole lot of heart to every couple she works with.

Toby joined the PLB Group in March 2024 and hit the ground running, quickly establishing himself across the group’s wedding venues. As a Supervisor, his days are spent managing the floor, assisting the coordinator and closing down each venue, ensuring every event runs seamlessly from start to finish. In just over a year with the group, Toby has already been part of approximately 80 weddings, bringing energy and professionalism to every one of them.

When it comes to weddings, Toby loves nothing more than a big celebration, the bigger the better. The buzz of a packed dance floor is where he truly thrives, whether he’s running food or keeping the bar flowing as the night comes alive. And if you spot the tomahawk steaks or lamb and potatoes on the menu, know that Toby is just as excited about them as your guests will be – a man who appreciates great food as much as a great wedding.

Alli has been a cornerstone of the PLB Group since September 2016, growing through various roles to become the group’s Operations Manager. Working across all PLB wedding venues and restaurants, her work happens largely behind the scenes, recruiting the right people for each event and facilitating training days and ongoing development to ensure every team member is set up for success. With her hands in rosters, run sheets, training and on-the-day support, she has played a role in every aspect of what makes a PLB Group event run smoothly.

When it comes to weddings, Alli has a special place in her heart for Islander weddings. Drawn to the strong family energy and the beauty of cultural tradition woven through every moment of the day. Her favourite part, though, is universal: the bride walking down the aisle. And if there happen to be bagpipes playing? That’s guaranteed to stir her Scottish highland blood and make it a moment she won’t forget. Warm, dedicated and deeply invested in the people around her, Alli brings a powerful force to everything she does at PLB Group.

Nadia joined the PLB Group in January 2018 and has built a wealth of experience across the group, now overseeing the event sales and planning team, supporting the operations team, and managing marketing across the entire group. Based at PLB Group’s Head Office in Casuarina, she moves fluidly across all venues, ensuring everything runs to the high standard the group is known for.

When it comes to her personal wedding style, Nadia is all about a garden party vibe. A little fun, a little flirty, and full of good energy. But ask her about her favourite moment of any wedding day and she won’t hesitate: the speeches. When they’re good, they’re really, truly good and Nadia lives for those moments of genuine laughter, love and happy tears that only a great speech can bring.

Ashleigh first joined the PLB Group in November 2018. Working behind the scenes, she oversees accounts, payroll and financial reporting, staff onboarding and recruitment. In short, Ashleigh takes care of all the details that allow the creative and celebratory parts of the business to shine. Her focus is always the same: ensuring every process, every task and every interaction feels organised, thoughtful and personal, so that both the team and the couples they serve feel genuinely supported and confident.

When it comes to weddings, Ashleigh has a soft spot for celebrations that honour cultural traditions. Her favourite moment of any wedding day is the vows, a self-confessed sucker for a good love story, and when it comes to the menu, the lamb has her heart every single time.
